Sustainable Eaters – Consumers in a sustainable Norwegian food system
There is no way around it: consumers must contribute to a sustainable future.
Slow progress on the Sustainable Development Goals, along with ambitious Paris Agreement targets, requires a rethinking of food systems. The food system is responsible for high emissions and impacts public health, trade, industry, and the environment in various ways. Sustainable Eaters supports a more sustainable food system by focusing on the consumer. The project aims to understand individual food choices, study behavioral changes in the Norwegian value chain, and guide consumers through knowledge and technical solutions. Case studies highlight opportunities and barriers to sustainability. Using a range of methods, the project will develop strategies to reduce food waste and plastic, and raise awareness about food choices‘ impact on health, climate, and the value chain. Sustainable Eaters brings together 8 academic institutions, 18 partners from industry, NGOs, and authorities, and an international advisory board.
